But sometimes, I like to mix things up and use my supply in different ways. Which is why I was tickled pink when I came across Polina Chesnakova’s Earl Grey Tea Cake in her book “Everyday Cake.” No need to brew this bad boy, just use those delicious black tea leaves flavored with the exotic oil of bergamot. And don’t forget the citrus zest for that extra zing! The result? A soft, crumbly, and sugary loaf cake that tastes as good as it smells.

Now, let me warn you, this method is more Spongebob Squarepants than Sponge cake. But don’t be scared of a bit of whipping and mixing, it’s well worth it. Start by whipping your cream into shape. Yes, we do recommend a stand mixer for the prolonged mixing at high speeds, as using a hand mixer will require some serious arm work. But trust us when we say it will be worth it. And if you don’t have Earl Grey, don’t fret! Feel free to use your favorite black tea instead.
